I've been on vacay with the fam for the past several days and am just about to go again for another week. This is most def. one of my biggest challenges--trying to stay on track and eat healthy when I'm visiting with family or friends. We go out to eat and then I'm usually screwed. It's usually so much easier to resist the bad stuff when I avoid restaurants...ugh...

Anyway. I intend to eat healhy today. Here's what's on the menu:

Ingredients

  • 6 medium peach(es), sliced
  • 6 1/3 Tbsp sugar
  • 1 Tbsp cornstarch
  • 1 tsp fresh lemon juice
  • 1/2 tsp ground cinnamon
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp table salt
  • 3 Tbsp reduced-calorie margarine
  • 1/2 cup fat-free skim milk

Instructions

  • Preheat oven to 375ºF.

     
  • In a large saucepan, combine peaches, 1/3 cup of the sugar (5 1/3 tablespoons), cornstarch, lemon juice, and cinnamon; toss to coat peaches. Set pan over medium heat and bring to a boil. Cook until mixture thickens, about 1 minute. Remove from heat and transfer mixture to an 8-inch square baking pan.

     
  • To make the topping, in a large bowl, combine flour, remaining tablespoon of sugar, baking powder and salt. Work in margarine with a fork until mixture resembles coarse crumbs. Add milk and stir until flour mixture is evenly moistened.

     
  • Drop 8 tablespoons of topping mixture onto peach mixture. Bake until topping is golden brown and filling is bubbly, about 20 to 25 minutes. Cut into 8 pieces and serve.

Ummm...I haven't been doing so well after my recent loss...I don't know why I sabotage myself like this. It's like things aren't exciting enough and I just have to dip down to that low again.

The past couple of days haven't been so good with Erik home either. Not that it's his fault, but I do tend to eat worse when he's around because I give in and eat stuff that he eats just to make things easier. Very bad habit. I should just keep doing what I'm doing. He also tempts me to eat out more because I want to enjoy our "family" time more...ugh....So many excuses and so little time.

Needless to say- I'm back on the wagon again...

I have an NSV to report though. I went to Target yesterday and bought a size 11 pair of shorts. Lately I've been fitting into 12/14's so I thought I might buy a size down to see if it would give me a little inspiration. I tried them on when I got home just to see if they fit. And? They did!!! A tad tight, but doable! Sweet!!!!!!!!!!!!!

I'm starting to get excited about the 50's!!! I'm getting sooo close. I was in the 50's when I got pregnant with Rachel almost 4 years ago...wow..has it really been that long since I was in the 150s????  I think I weighed about 155 or so when I first got pregnant with her in 2004. 

Recipe of sorts-
I made the chicken enchiladas tonight and they turned out sooo tasty! Browned the chicken in a pan an sauteed some chopped onions for the last couple mins. Then I removed the chicken and shredded with a fork (very important!!!). Put chkn back in pan with onions and cooked for another min along with some chili powder, salt, and pepper. Put it on the back burner and turned it off and then added 1 1/2 c lowfat cheddar shredded cheese and 1/2 cup mozarell lowfat shredded cheese. 

Preheated oven to 375 and sprayed 13 x 9 pan with Pam. In a smaller saute pan, I poured a few tbsp's worth red enchilada sauce (large can) and heated on low/med to warm flour tortillas one at a time and coat with sauce. Filled each tortilla w/ chkn,onion, & cheese mix and placed seam side down in pan. Poured remaining enchilada sauce over top along with 1/2 c cheese. Bake for 20 min. Mmm mm mmm...

Weight this a.m. was 163.6!!!!!! Woot!!!!!!!

I think breaking past 164 really inspired me to be good at the bday party today. I only ate a couple of bites of Rachel's leftover cheese pizza plus some fresh veggies and fruit from the buffet. I bypassed the cake altogether. Woot! I think what really helped was that I ate a lowfat cheese and ham sandwich on a wheat bun before I left for the party. I also downed a slimfast shake when I got home afterwards. I think it's a good idea to fill up on something healthy before I leave for one of these parties where I know I will be tempted. I'm a lot less likely to eat bad stuff when I'm not really all that hungry.  We also went over to a friend's house for dinner tonight and although they were having steaks, I had brought some chicken breasts so that I could mostly fill up on that too ;-)

Today we went to one of Rachel's friend's bday pool parties. They had burgers & and hotdogs and they didn't look to be fat free by any stretch of the imagination. Way too juicy looking for that! I am soooo proud of myself though. There was a super yummy looking home-made potato salad (one of my all time loves) that was offered to me TWICE by friends...I didn't do it!!! I also did not eat the bday cake although everyone was raving about it. It was vanilla so actually easier for me to forgo. I'm a chocolate girl myself...But gah!!!!!!! So many temptations all around and I think I escaped so well to do as I did. I was so beat by being at the pool all day with both kids and no Erik to help that by the time I got home there was no way in hell I was making any kind of dinner. Erik saw a coupon in the mail from Arby's that advertised 4 reg. roast beefs for $5...so he ate 3 and I had 1! I was so hungry from not eating much at lunch that I was kind of surprised when I didn't feel super hungry after only wolfing one down. I rock. Who rocks? I do! I do!!!!!

Another kid's bday pool party tomorrow. Wish me luck...

Not the best of days. I had met up with a mom friend at the bk playground and had eaten a small burger (no cheese). Good in some ways I suppose, but not the best. She also had an apple pie she was tempting me with and I only ate 3 of the offered onion rings (one of my all time favs).

New treat: WW lemon cake bars. Only 1 point and pretty yummy. There are only 6 or so in the box, so even if you cave and eat the whole thing that's still only 6 pts...  

Weight this a.m. was 166 even. Getting there slowly...

I will do better tomorrow now that I have things int he cupboard I can eat. I went to costco and bought fiber one bars, boca burgers, and slimfast shakes. I also need to stop by the store and get a few other things to help with the healthy eating, but at least I have a few things to tide me over until then. Today was rough! Ugh...

Day 069 (and not in a good way)

This is the post where I confess all. I fell of the wagon and bumped my ass. Hard. Ergh. I am so annoyed with myself.

Although there were brief moments of goodness during my vacation, overall I would say that I was pretty bad. Moderation flew out the window and I pretty much ate however much I wanted to eat and whenever I wanted it. I will say one thing though--I felt more in touch with my body and with my need for food. I didn't ever eat so much that I felt uncomfortable and sick to my stomach. I was able to stop before reaching that point--so maybe that is the bright light at the end of the tunnel???

Today wasn't so very good either. It did start out well with a standard oatmeal breakfast. Lunch was 2 turkey hot dogs with no bun. Dinner--? Hubby came home with his buddies after a Key West charter fishing trip. They brought I don't know how many lbs of fish and demanded a fish fry with all the trimmings. Fried fish (canola oil), hush puppies, corn on the cob, red potatoes with butter, and then brownies for dessert. That husband will be the death of my diet I swear! Ergh...What could I do? We had company and they all wanted only one thing...

Tomorrow I will begin my process again.

This a.m. I weighed 167 lbs. So I am up 3 lbs from my former 164 lbs prior to said vacay. So depressing. And I also feel annoyed with myself  because all of that bad eating was not worth it. Not at all. And I didn't even really enjoy it because I kept thinking to myself how much it was going to suck having to lose those lbs all over again.
